Pumpkin Pudding Recipe

Description: If you love pumpkin, you'll love this pudding. It comes from the United Kingdom, compliments of Hilary Jupp.


Ingredients:

1 cup pumpkin puree
1/2 cup self-raising flour
1/2 cup butter, softened
1/2 cup apricot jam
1/2 cup sultanas (dried grapes)
1 tsp. baking powder
1 egg
1/2 tsp. mixed spice


Preparation Directions:
  1. Butter a 2 pint basin and put to one side.
  2. Mix the softened butter and apricot jam together until well mixed.
  3. Then beat in the egg.
  4. Add the pumpkin, mixed spice, flour, baking powder, and sultanas, and mix thoroughly.
  5. Pour into the greased basin, cover with a layer of foil and tie with string.
  6. Place on a trivet in a large saucepan and add hot water to half-way up the basin.
  7. Bring to the boil and simmer for three hours, adding more water if necessary.
  8. Serve with cream.

Note: If you can not find Sultanas, substitute with raisins.
